Pot still whiskey is a type of whiskey that is currently only available in Ireland. Pot still whiskey, once also known as pure pot still, originated in Ireland in the middle of the 18th century. Due to the taxation of malted barley, the shrewd Irish began producing whiskey from unmalted and malted barley. Pot still whiskey is therefore one of the historic forms of Irish whiskey. As the name suggests, pot still whiskey is distilled in copper pot stills. This means that pot still whiskey essentially differs from its well-known sibling, the single malt, only in the use of unmalted barley. If the whiskey comes from just one distillery, it is referred to as single pot still whiskey. Pot still whiskey is described as oily, aromatic and with subtle spice and grain notes. In terms of quality and aromatic depth, pot still whisky is in no way inferior to single malt whisky.
