Old Tom Gin can be seen as the predecessor of gin. It is slightly sweetened after distillation. The flavour of Old Tom gin is usually much milder than its dry relatives. Both the juniper note and the flavours of the other botanicals are less dominant. It was very popular in the 18th and 19th centuries and is particularly suitable as a base for cocktails and long drinks thanks to its diverse, often fruity flavours. The name of the classic cocktail Tom Collins can be traced back to the use of Old Tom gin.
