Bimber is a hugely exciting craft whisky distillery in London. The name Bimber comes from the Polish word for moonshine (black distilled spirit). Founder Dariusz Plazewski honours his Polish roots and the legacy of his grandfather, who was also a distiller. Bimber sources its barley from a single farm near London. The malted barley is farm-malted and malted separately by Warminster Maltings for the distillery. With greatattention to detail, Bimber takes a whole week for fermentation and controls the fermentation vats with cooling systems. This gives the yeast more time and allows more varied flavours to develop. The spirit for the single malt is distilled in alambic stills from Hoga and then filled into barrels from the company's own cooperage. Bimber is a young whisky so far, but one that already knows how to impress. It is not for nothing that Bimber was honoured at the Whisky Awards 2020. When you enjoy Bimber whisky, you can expect a great wealth of flavours. Bimber single malt is very fruity with fine cereal notes and draws flavours of caramel, toffee and honey from the special casks. There are also smoky variants of Bimber.
