For The Octave, the independent bottler allows selected single and blended malts or single grains to mature for several months in approximately 50-liter Sherry Octave casks - thus achieving extremely refined, balanced flavor profiles.
A new product exclusively for Germany proves this: The Holyrood 2021/2025 is one of the few independent bottlings from the up-and-coming distillery from Edinburgh. The Holyrood Distillery reflects on the rich brewing heritage of its hometown. For the flavor spectrum of its traditionally produced single malts, the craft distillery draws on the same ingredients as the infinitely diverse beer category: a wide variety of malts and yeast varieties.

The Lowland Single Malt spent three years in oak Casks and was refined over a period of seven months in Sherry Octave No. 12143777. Honey and a baking mix with hazelnuts meet earthy notes and green olives on the nose. This exclusive bottling coats the palate with sweet sherry notes, soft caramel, strawberry cake with cream, and orange juice.
