Portrait: What makes the Daftmill 15 year old Fife Strength 2009/2024 special

Unlike with the lion's share of Scottish distilleries, Daftmill Farm is primarily all about cows, potatoes, carrots, and the cultivation of malting barley.
As one of the few family-run farm distilleries, Daftmill has been processing its own barley into single malt since 2005.

However, this is always done in small quantities, sometimes no more than 100 Casks per year, and exclusively in the off-season, when the farm allows. In 2022, the Cuthbert family bottled their oldest and first single malt with an age statement to date - and is now providing a follow-up with the Daftmill 15 year old.
The Optic barley for the Lowland Whisky comes from the farm's southern fields. Distilled in the two copper stills, 20 first-fill Bourbon Barrels and a Pedro Ximénez Sherry Cask were combined to create Daftmill's new eldest. It was bottled at Fife Strength, a region-traditional strength of 56.3%vol.
