Making Irish Whiskey as it used to be was the declared goal of Brendan Carty, founder of the Killowen Distillery, one of Ireland's smallest distilleries, located in the heart of the Mourne Mountains in southern County Down, Northern Ireland.
Killowen Irish Single Malt Rum & Raisin is distilled in small batches in copper pot stills. It was aged for over five years in select oak casks before receiving its refined finish, first in former Dark Rum Casks and then in Pedro Ximénez Sherry Casks.
The Dark Rum Casks give the single malt a Caribbean touch, while the Pedro Ximénez Sherry Casks offer sweeter notes. The nose detects aromas of fresh apple juice combined with molasses and a portion of warm Christmas pudding. On the palate, sweet, juicy green apples combined with dark sugar. This is accompanied by a selection of dried fruits such as raisins, sultanas and figs, which combine perfectly with the dark rum. The finish offers aromas of caramelized Demerara sugar with caramel apple and ground almonds, ending with intense notes of Christmas cake.
