Portrait: What makes the Holyrood Ambir special
Edinburgh's Holyrood Distillery draws on the rich brewing heritage of her hometown for complex whiskies. For the flavor range of its traditionally produced single malts, the craft distillery relies on the same ingredients as the endlessly diverse beer category: various types of malt and yeast.
Seven sweet (special) malts and ten fruity yeasts form the taste foundation of the latest bottling Ambir. Named after the Scottish word for amber, the unadulterated and lush Ambir is the whisky of choice for all sweet tooths. Caramel, fudge, red fruits and vanilla characterize the character of the dessert malt. This is rounded off by maturation in former bourbon and a small proportion of sherry casks.
Matured in 1st-fill Bourbon Barrels (89.7%) and Oloroso Sherry Casks (10.3%)
Tasting Notes: This is how the Holyrood Ambir tastes like
- Nose: initially caramel, creamy fudge and Demerara sugar, followed by rich aromas of Scottish Tablet (confectionery made from sugar, milk and butter)
- Palate: full and soft with notes of ripe red fruits, creamy vanilla and cornflakes
- Finish: biscuit-like notes with a velvety texture, hints of savory in the long finish
