As Denis McCarthy, Ger McCarthy and John O 'Connell founded West Cork in 2003, it made little economic sense to open a distillery. Today, West Cork is home to Skibbereen - the country's largest wholly Irish-owned distillery. This remarkable success builds on the vision of the three Founder friends: Produce whiskeys of the highest quality at attractive prices. This is achieved, among other things, with creative cask finishes that show Irish whiskey in all its facets. For example: refined in rum barrels.
 
Exclusively for the German market, West Cork filled a limited special edition of their West Cork Rum Finish Single Malts  ;in barrel strength from. 3,060 bottles demonstrate the delicious effect of four years in first-fill bourbon casks and six months in rum barrels from Panama: The small batch develops aromas of honey, vanilla and Chocolatefading into roasted notes of coffee, accompanied byexotic fruit and coconut notes.
