Kingsbarns Doocot replaces the “Dream to Dram".
Nothing changes in the successful recipe of exBourbon Casks and STR Barriques, but < strong>The age of the barrels used is now at least 7 years - and this leads to a wonderfully soft malt that delights with tropical fruit aromas and vanilla.
It is amazing how quickly Kingsbarns Single Malt matures. One thing is certain, Peter Holroyd, the Distillery Manager, lays the foundation for this through his masterful production.
It is not without reason that he uses two yeasts, one Distillers Yeast for enough output as well as a Brewers Yeast to create lush flavors during fermentation. He gives both yeasts a lot of time to do their work and so he gets a particularly fruity wash, which is then distilled extremely gently and with a short, highly pure middle cut. Master Blender Isabella Wemyss is personally responsible for the First Class Casks, which are worthy of the excellent New Make and complement it with intense aromas.

Nose: sweet and floral with aromas of brown sugar and banana cake - above all tropical fruits

Palate: mouth-filling and soft with strong notes of pineapple syrup, ripe summer berries, fresh vanilla pods and a hint of rhubarb

Finish: medium-long in the fruity finish with hints of ripe kiwis and citrus peels - vanilla in the background
