The Kilchoman Sauternes Cask Matured matured for at least 5 for years exclusively in former Sauternes wine barrels, which were personally selected by Kilchoman founder Anthony Wills. For this Islay single malt, Anthony Wills chose a combination of first-fill and refill Sauternes casks to achieve the perfect balance of buttery sweetness, BBQ pineapple, candied ginger and floral peat smoke
22% first-fill and 78% refill Sauternes Wine Casks were used.
The refill Casks were previously used for the 2018 bottling used as first fill Casks.
There are not many sweet wine appellations in the world. Sauternes is certainly the best known. The region covers around 1,700 hectares of vineyards, and the equally famous neighboring community of Barsac has around 600 hectares. Why such a fine sweet wine is produced in these two areas, which are like enclaves in the Graves region, is thanks to both the soil and the special microclimate.

- Nose: creamy, buttery aromas with ripe fruit, a hint of salty air and subtle peat smoke
- Palate: Butterscotch and floral notes combine with tropical and candied fruits, clearly grilled pineapple and candied ginger - clearly peat smoke above everything
- Finish: the sweetness continues into the finish, balanced with clean, lingering smoke and rich texture
