Signatory founder Andrew Symington went from being a “bottler” to a distiller in 2002 when he took over the Edradour Distillery.
 
Producing whisky in its most original form - that made “Scotland's Little Gem” has become a legend among Scotch fans. As one of the few distilleries in Scotland, Edradour produced its single malt exclusively in the old farm buildings until 2018. Some with equipment that has been around for more than 100 years and is rarely used in whiskey production anymore. That hasn't changed even after the completed expansion with Edradour II.
 
The Highland distillery is now expanding its favorite status with a new bottling from red Wine Casks. The Edradour 12 Years Matured in Burgundy Casks spent its entire time in first fill Burgundy hogsheads. An inviting small batch whiskey was created from eight of these French Casks, which is characterized by intense, dark fruit, delicate honey sweetness and mild spices.

Tasting Notes: This is how the Edradour 12 year old Matured in Burgundy Casks tastes like

  • Nose: sweeter at the beginning , creamy honey in abundance, then sweet, ripe dark fruits join in - above all spicy aromas of cardamom, canel and anise 
  • Palate: now significantly fruitier - especially dark ones Berries and plums - plus spicy notes in a very nice balance, especially fresh herbs and cracked pepper
  • Finish: Long lingering on the finish - again the fruits with a pleasant sweetness, the spiciness resigns
