Portrait: What makes the Isle of Raasay Dùn Cana special
A tiny, beautiful island Whisky history is being made off the west coast of Scotland: Since 2017, single malt has been legally distilled for the first time on the Isle of Raasay, opposite Skye. The Isle of Raasay Distillery has since become the heart of the island community. Today, over ten percent of the approximately 160 residents lend a hand to whiskey production.Their island is a constant source of inspiration.For example, for thelimited Sherry Quarter Cask Release, Dùn Cana.
The single malt is a homage to its home in the Hebrides and the iconic peak of Dùn Caan (Dùn Cana in Gaelic), the highest hill on the Isle of Raasay. Typically for the distillery, it combines peated and unpeated whisky. After initial maturation in rye casks from Kentucky, it was refined for nine months in small quarter casks (125 liters), which previously contained the bodega's Pedro Ximénez and Oloroso sherry Miguel Martin included.
At 52%vol. Dùn Cana exudes peppery spice, dried sultanas, roasted nuts and a hint of vanilla, before ending with salty chocolate and hints of aromatic wood smoke.
With Dùn Cana, the distillery is starting a bottling series that will be expanded every year with a new edition. Each edition will differ slightly in terms of Cask composition or age.

- Nose: spicy aromas paired with sultanas, raisins and roasted nuts - in the background some vanilla
- Palate: full of flavor - again the dried fruits, with a peppery spice and also the roasted nuts again
- Finish: medium-long finish with tones of salted chocolate and spicy wood smoke
