Signatory has been since 1988 Vintage Bottler of exceptional Whisky treasures and has established itself internationally in the industry in this relatively short time for the whisky world. With his bottlings, Andrew Symington makes drops available to connoisseurs that are usually hidden from them. Signatory has recovered this treasure from the more than 10,000 hogsheads, butts and co. that are stored in the warehouses of Signatory Vintage.

Andrew Symington is an expert in tracking down exclusive Scotch whiskies. For the Signatory series “Symington's Choice” he personally selects rare casks that have been matured for a particularly long time with a high level of artistry.
These include some of Scotland's most famous distilleries.

Islay Single Malt from a bourbon cask: Anyone who loves this no-frills classic will find what they are looking for with two single casks from sister casks.
The journey started in the mid-1990s of the two rarities, Unnamed Islay 1992/2024 from barrel #6778 and from barrel #6776. After an extended maturation period, the limited single malts develop notes of vanilla, caramel and smoke, supported by still powerful volume percentages.

Tasting Notes : This is what the Unnamed Islay 31 year old Bourbon Barrel #6776 Signatory Symington's Choice tastes like

• Nose: slightly sweet aromas of ripe apples and soft peat smoke, then clearly bourbon Vanilla and barley malt, in the background old leather and some chocolate
• Palate: round and soft in the taste with notes of fresh fruit, apples again, plus malty tones and freshly baked things - over all smoke, chocolate and a hint of vanilla
• Finish: long finish - soft caramel with vanilla carries the finish, with gentle peat smoke on top of everything
