Signatory has been since 1988 Vintage Bottler of exceptional Whisky treasures and has established itself internationally in the industry in this relatively short time for the whisky world. With his bottlings, Andrew Symington makes drops available to connoisseurs that are usually hidden from them. Signatory has salvaged this treasure from the more than 10,000 hogsheads, butts and co. that are stored in Signatory Vintage's warehouses.

Andrew Symington is an expert in tracking down exclusive Scotch whiskies. For the Signatory series “Symington's Choice” he personally selects rare barrels that have been matured for a particularly long time with a high level of artistry.
These include some of Scotland's most famous distilleries.

Islay Single Malt from the bourbon cask: If you love this no-frills classic, you will find it with two single casks from sister casks.
Already in the mid-1990s Years began the journey of the two rarities, Unnamed Islay 1992/2024 from cask #6778 and cask #6776. After an extended maturation period, the limited single malts develop notes of vanilla, caramel and smoke, supported by still powerful volume percentages.

Tasting Notes : This is what the Unnamed Islay 31 Year Old Bourbon Barrel #6778 Signatory Symington's Choice tastes like 

• Nose: at the beginning soft caramel and dark chocolate, then ripe barley and vanilla, some malt and aromas of fresh herbs - above all a pleasant smoky note
• Palate: mouth-filling and soft with a now clearer smoky note - the caramel is now joined by fudge and a stronger vanilla note - in the background there is a light, ripe one Fruit
• Finish: long finish with soft peat smoke, vanilla and ripe fruit
