In 1988, Andrew Symington founded the Signatory Vintage Scotch Whisky Company Ltd. and since then has been bottling exclusive Casks from a wide range of Scottish distilleries from Pitlochry in the Highlands. His limited enjoyment experiences from single or a few Casks come onto the market in series - such as the Un-Chillfiltered Collection. 
There is no chill filtration here, so it stays that way Flavor-bearing oils and fats are preserved in the single malt and are reflected in the taste.

In February 2023, Signatory will be releasing a new edition of a popular classic from the whiskey island of Islay according to: The Caol Ila 10 year old Hogsheads is intensely smoky, distilled around 10 years ago on the east coast of the whiskey island of Islay and produced in Bourbon Hogsheads aged.

• Nose: burnt rubber and black pepper, plus comes candle wax, oak aromas and malt
• Palate: oily with a lot of smoke from burnt oak, salt water and malt again, some anise
• Finish: long finish with clear peat smoke and sea salt
