Portrait: What makes the Kilchoman PX Sherry Cask Matured

Kilchoman's first bottling that matured exclusively in former Pedro Ximénez Sherry Casks.
61 Hogsheads were selected for the Kilchoman PX Sherry Cask Matured, which previously contained Pedro Ximénez Sherry from Bodega José y Miguel Martin in Jerez, Spain.

Some may think five years is a short period of time for aging, but these Pedro Ximénez Sherry Hogsheads produce such a rich and sweet character that shorter aging is the only option, a good one Maintain flavor balance.  

Here you discover Kilchoman's renowned citrus sweetness and peat smoke in wonderful balance with the Pedro Ximénez character to create a multi-dimensional single malt, rich and sweet with a hint of light citrus sweetness and   Waves of maritime peat smoke.

Tasting Notes: This is how the Kilchoman PX Sherry Cask Matured tastes like

  • Nose: sweet sultanas and raisins with elegant peat smoke and layers of licorice - in the background the typical Kilchoman citrus sweetness
  • Palate: brown cane sugar and a malty sweetness are present, as well as orange peel, citrus fruits and dark chocolate - above all a wonderful sherry sweetness
  • Finish: in the long finish, intense notes of Pedro Ximénez sherry, plus clear tones of chocolate-coated raisins, paired with the smoke of burning oak wood and fresh spices
