With the Kilchoman Genesis Mashing Stage 4, Kilchoman offers one unique Single Farm Single Malt Whisky.

The bottlings of the Kilchoman Genesis product series tell the story of the creation of Kilchoman whiskey - the 1,130-day journey from barley until bottling the single malt.
Each phase of whisky production has a major influence on the character of the whisky.
 
Day 28 - Mashing:
With the new Genesis Single Malt Stage 4 · Mashing, we are once again embarking on the journey of the creation of Kilchoman whisky.
After peating, the barley first rests before it is transported to the still house for mashing. The custom-made, hand-operated 1.2-ton mash tun with its slowly rotating rakes is started every day. Careful attention is paid to ensuring a well-balanced water temperature. This is for the purpose of extracting fermentable sugars from the crushed barley grains. The resulting sweet liquid “wort” then forms the basis for the Kilchoman whisky.
 
The maturation of Kilchoman Genesis Mashing Stage 4 takes place 75% in exBourbon, 20% in exCognac and 5% in exSherry casks.

As the only Scottish distillery of a single farm single malt, Islay's Farm Distillery Kilchoman has been surprising us with special bottlings since it was founded. Genesis tells the unique story of how Kilchoman whiskey came about and shares the ambition of Kilchoman founder Anthony Wills to revive the centuries-old and elaborate tradition of farm distilling.
The Kilchoman Distillery is nestled between the traditional buildings of Rockside Farm on the Northwest coast of Islay. Famous as Islay's Farm Distillery, the distillery's barley fields extend west to the shores of Machir Bay and the Atlantic Ocean.Kilchoman is unique in many ways, particularly because of the 100% Islay range, Scotland's only single malt, made from barley grown and malted on Islay. Genesis tells the story of the creation of Kilchoman Whisky - the 1,130 day journey from barley to bottle with the aim of reviving the tradition of agricultural distilling. Each stage of the whisky making process has a profound impact on the character of the whisky. Mashing is the fourth stage of this process. The Genesis Series is one of the few Kilchoman bottlings made from a combination of 20ppm barley - harvested and peated locally at Kilchoman - and 50ppm phenolic barley from Port Ellen Maltings
