Portrait: What makes the Caol Ila 8 year old 2015/2023 Very Cloudy Un-Chillfiltered Signatory

In 1988, Andrew Symington founded the Signatory Vintage Scotch Whisky Company Ltd. and since then has been bottling exclusive barrels from a wide range of Scottish distilleries from Pitlochry in the Highlands. His limited enjoyment experiences from single or a few Casks come onto the market in series - such as the Un-Chillfiltered Collection. Their Very Cloudy Whiskies are naturally cloudy. The reason: Despite only 40%vol. The single malts are not chill-filtered. This way they retain their full aroma. And at the same time they are real eye-catchers.
The reason for this is the oils and fats contained in the whisky, which are filtered out during chill filtration, but these flavor carriers are fully contained here.

In October 2023, Signatory will follow up with a new edition of a popular classic from the whiskey island of Islay: The Caol Ila 8 Year old 2015/2023 is intensely smoky, distilled around 8 years  on the east coast of the whisky island of Islay and matured in Bourbon Hogsheads .
