The best example of regional ingredients: bladder wrack, spoonwort and ground ivy. The plants can be found on the beaches around Edinburgh. As characteristic botanicals of the Edinburgh Seaside Gins, they bring the coast around the port city to life in a sensory sense.
Bladderwrack has a high residual sugar content and gives the nose and palate a sweetness that brings with it the scent of sea air. Spoonwort is slightly spicy and salty. Gundermann adds fresh, summery notes of grass on the finish.
Fresh, mineral and sweet the Seaside Gin is easy to combine with tonic >or serve as a martini. It also tastes great on its own, for example with a slice of grapefruit or a sprig of crunchy, salty sea fennel.
