Eden Mill is back with the Art of St. Andrews 2022
Gin, whisky and beer from one house? This is rare in Scotland.
In the production of their spirits, the Eden Mill Distillers combine the best of the three crafts - and show courage to innovate: the gin sometimes matures in bourbon casks, the unhopped beer provides the basis for the whisky.
In the future, Eden Mill will be distilled in a state-of-the-art, climate-friendly distillery on the University of St Andrews' Eden campus, which will draw electricity and heat from a biomass plant and solar panels.
Now, after a break caused by the pandemic, the Art of St Andrews Collection is returning, for which Eden Mill is cooperating with local artists.The Eden Mill Single Malt Whisky Release 2022 is a limited bottling of a total of 3,000 bottles.
Matured in bourbon casks, but above all in Pedro Ximénez and Oloroso sherry casks, the limited release provides a foretaste of the future whisky style of the emerging distillery.
The extraordinary The packaging is by artists Mairi Clark.
Her powerful, colorful oil painting depicts the dramatic seafront at St Andrews, with the whisky distillery under construction visible as a bright dot on the horizon.
The Artwork also reflects the aromatic interplay of the new bottling: a sweet yet subtly spicy whisky that offers notes of sherry and apple, which are underpinned by buttery nuts with roasted aromas and spicy bitter substances.
