Portrait: What makes Discarded Chardonnay Vodka

Once the grapes have been crushed and pressed during winemaking, the remaining fruits, stems and seeds become the harvest referred to as “pomace”. Discarded Spirits Co. distilled this grape waste to form the base for its Chardonnay Vodka. The additional taste compliment comes from the wine industry. When wine is dealcoholized, there are two end products, the “non-alcoholic wine” and the “wine alcohol” separated from the wine. This “wine alcohol” is usually resold or even destroyed. The final vodka is clean, but with a typically soft, zesty Chardonnay finish.
