Kopke is the oldest port wine house - every wine in this house tells a story.
The grapes for Kopkes Colheitas are harvested and destemmed by hand at the optimum time, then pressed and processed.
The wine is carefully macerated to extract the colour, tannins and aromas, which are enhanced by constant stirring during fermentation - this is done in barrels (lagares) at a controlled temperature between 28-30 degrees Celsius until the desired level of sweetness (baumé) is reached is.
At this point pomace brandy is then added to make the final fortified wine.
Kopke Tawny Ports are premium wines made by blending wines from different harvests to achieve the range of sensory qualities typical of these aged tawny ports.
Kopke Tawny Ports are aged in oak casks for varying periods of time, with the average age of all the wines used in the cuvée determining the age on the label.
The cuvée expresses the characteristics given by the aging in the wood.
The Kopke Tawny 40 years old has a deep amber color with a greenish rim.
Nose: complex on the nose, with aromas of dried fruits such as raisins, figs and walnuts, enveloped by subtle aromas of vanilla and honey
Palate: dense, silky and concentrated on the palate with an impressive freshness
Finish: more powerful and particularly long on the finish
Irresistible with a starter of foie gras with eggplant and walnuts.
A great choice for an endless array of desserts like toffee brownies, chocolate pistachio pavé or walnut crostini with chèvre.
Best served at a temperature between 12 and 14 degrees Celsius.
