When a conservationist becomes a mixologist: Everleaf brings together the passions of former conservation biologist and current bar owner Paul Mathew - and benefits from his deep understanding of nature.

Inspired by mountains, forests and the sea, he designs his alcohol-free aperitifs exclusively with botanicals from sustainable production.

Mathew also solves the challenge of the right texture in a natural way.

He skilfully imitates the alcohol's own consistency with extracts from acacia or algae, for example.

Everleaf Marine is aimed at friends of classic gins.

16 botanicals such as juniper, bergamot, sea buckthorn or green tea ensure a crunchy and refreshing taste experience.

For alcohol-free gin and tonic enjoyment, simply add a light tonic water.

Botanicals: bergamot, sea buckthorn, dulse algae, kelp algae, olive leaves, juniper, elderflower, labdanum (resin), orris root, green tea, eucalyptus, pine, Roman wormwood, thyme, orange blossom, fennel

Nose: fresh bergamot and citrus aromas with typical juniper notes, followed by sea spray and a hint of thyme and olive groves

Taste: crisp and refreshing, with a hint of tropical pineapple from sea buckthorn, which merges into a hearty umami sweetness from the Dulse algae

Finish: citrus fruits, followed by salty seaweed and olive leaves
