Portrait: What makes the Isle of Raasay special
Peated and unpeated raw spirits, matured separately on the coast from Raasay in three selected cask types: The Isle of Raasay Hebridean Single Malt in a nutshell. The combination of First Fill Rye Whisky Casks, Virgin Chinkapin Oak Casks and First Fill Bordeaux Red Wine Casks has not yet existed in the history of Scotch whisky. In the island whisky, cherry meets apricot and wood smoke meets salt caramel. The raw spirit already brings dark fruit notes. In addition, mineral-rich Raasay water and a very long fermentation of up to 118 hours (5 days) ensure the characteristic taste of sweet blackberry fruits even before each contact with the Cask.
The Raasay-Character - The young distillery emphasizes character with its own bottle shape. The uneven surface captures the wild beauty of the island's landscape and its geological heritage. The basis for the Signature Single Malt is malt from Scottish barley, kilned over Highland peat. Still! The stated goal is to only use ingredients from the windswept Hebridean island. The founders, Bill Dobbie and Alasdair Day, brought barley farming back to Raasay in May 2017 after more than 40 years. Since then, the old Icelandic varieties Bere and Iskria have been thriving here.

- Nose: Sweetness and Smoke, wood smoke on sea air - dried and ripe apricots, candied fruits and ice cream cherries
- Palate: sweet spices, cinnamon and black pepper as well as black currant and wood smoke, with heather, Honey and salted caramel, sweet and salted popcorn and black cherries
- Finish: pleasantly dry and long with a hint of salt, fine wood smoke and dried fruits
