The Dingle Distillery is located at one of the westernmost points in Europe. In front of their gates stretches the breathtaking landscape of theWild Atlantic Way, highly valued by Hollywood: windswept coastlines, green hills that end in jagged rocks, glittering waves all the way to the... Horizon and white sand beach. Anyone who lives here is grounded. Like the Celts once did, who settled on the peninsula thousands of years ago.
And so things take their time in Dingle. Handwork is very important in the distillery - in every production step. Master Distiller Graham Coull and his team personally lend a hand, from mashing through to separating the first, middle and final run during distillation through to bottling. They give their whiskey their signature as much as the place itself: Distilled from their own well water, it matures in a mild maritime microclimate. The result? Irish whiskey of the highest quality.
Almost ten years passed after it was founded in 2012 until a standard bottling in 2021 replaced the distillery's single malt and single pot still whiskeys, which were always only released in small batches.
Typical for Ireland, this Dingle Distillery Single Malt Irish Whiskey is distilled three times. This makes it pleasantly soft. Dingle uses three individual copper stills from the traditional manufacturer Forsyths.
It then matures to 69 percent in first-filled barrels, pre-filled with the sweet Pedro Ximénez Sherry, and 31 percent in first-filled bourbon casks.
From this, Coull and Co. combine an accessible but complex experience with notes of lemon zest, mint and sweet pear in the nose as well as caramelized apple, raisins and vanilla on the palate.
