Waterford Ballykilcavan 1.2 - Single Farm Origin 50% vol. Sample 0.04l
The barley fields of Ballykilcavan are on the one hand protected by picturesque old forests, on the other hand they are exposed to the salty Atlantic winds on the coast.
The bottling Ballykilcavan Edition 1.1, Waterford's first bottling, was sold out very quickly due to the high demand.
Now the distillery is adding this new edition. Ballykilcavan Edition 1.2 is as individual and complex as its predecessor.
Also limited, it differs in the composition of the barrels and the slightly longer maturation time.
The Ballykilcavan 1.1 was stored in American first-fill oak barrels, French premium barrels and Vin Doux Naturel Casks
- Aroma: red grapes, plowed ground and dried fruits, plus a stable smell and baked apples cooking in the pot and the scent of rain on dry earth, reminiscent of the scent of a forest after the first rain shower for days.
- Taste: oily mouthfeel with notes of white pepper, then apricots, spices, toffee, malt and wood chips
- Finish: dry and oily in the finish, again the spices, plus chocolate and a lot of malt
Waterford Bannow Island 1.2 - Single Farm Origin 50% vol. 0.7l

- Aroma: malty with aromas of ripe pears, pink lady apples and lemons, with raisins, warm vanilla cream and marzipan
- Taste: the ripe fruit again, followed by honey, caramel and malt biscuits, followed by a hint of hot spices, toffee popcorn and lemon cake
- Finish: long-lasting finish - oily with a spicy sharpness that ends dry
Waterford Ballymorgan 1.1 - Single Farm Origin 50% vol. Sample 0.04l
In the rain shadow of the Wicklow Mountains, the fifth generation of Robert Milne's family cultivates the fertile fields, the barley of which was distilled to the fruity, sparkling Ballymorgan Edition 1.1 in 2016.
The Ballymorgan Edition 1.1 was stored in American first-fill oak barrels, French premium oak barrels, Virgin Oak Casks and Vin Doux Naturel Casks
- Aroma: green apples and pears, then milk chocolate, malt and dried fruits, in the background rhubarb and warm pudding
- Taste: again the green apples, now with caramel, vanilla pudding and a hint of cloves - a tangy tingling sensation with liquorice and mint chocolate
- Finish: warming and long finish - oily with tones of spicy chocolate
Waterford Sheestown 1.1 - Single Farm Origin 50% vol. Sample 0.04l
Sheestown barley in County Kilkenny grows on a hilly terroir of well-drained clay soil. It is the distillation base for Waterford's honey-sweet and spicy Sheestown Edition 1.1.
The Sheestown Edition 1.1 was stored in American first-fill oak barrels, French premium oak barrels, Virgin Oak Casks and Vin Doux Naturel Casks
- Aroma: earthy aromas, with cloves and fresh English fruit cake - then lightly spiced, poached in red wine, pears, some honey and midsummer hay
- Taste: like a gentle mixture of spices with long-lasting, dry clove, with lemon jam, porridge and fresh honey
- Finish: the cloves again, complemented by other spicy notes - long-lasting
Glendalough 13 Year Old Mizunara Finish 46% vol. Sample 0.04l
The guys from Glendalough are known for their willingness to experiment - and so this single malt whiskey first matured in ex-Bourbon barrels made from American oak and then received a finish in puncheon barrels made from Japanese Mizunara oak.
- Aroma: clear vanilla and soft toffee, with ripe oranges and pine nuts - in the background roasted almonds
- Taste: clearly nutty in taste with almonds and pecans, plus macadamia nuts coated in chocolate - above all ripe apricots and pears
- Finish: the fruit again, with sandalwood and milk chocolate - behind it light tones of roasted coffee beans
