West Cork Irish Stout Cask Matured

The distillery West Cork was founded in 2003 by the three friends Denis McCarthy, Ger McCarthy and John O'Connell founded - two earlier Fishers and a food developer.
The trio got it two top-class consultants on the boat: Barry Walsh, among others worked as Master Blender for Jameson, and Frank McHardy - former Master Distiller at Springbank.
Used for his whiskeys Team only fresh spring water from the nearby Ilen River. The grain comes from Irish cultivation and is still in Handcrafted locally malted.

Typical of the mild Irish Whiskey style, all West Cork bottlings are distilled three times. The stills are only half filled - for a stronger one Interaction between the copper of the pot stills and the ascending ones Steaming.

For the beer keg finishes, the West Cork blends Whiskey after ripening in first-fill exBourbon barrels in IPA or The barrels from the Black's brewery in Kinsale are finished.
The influence of the beer kegs is clearly noticeable in the nose as well as in the taste.

This bottling was finished in Stout beer casks from the Black's of Kinsale Brewery.
