West Cork Irish IPA Cask Matured 40%vol. Sample 0,04l

The West Cork distillery was founded in 2003 by three friends Denis McCarthy, Ger McCarthy and John O'Connell - two former fishermen and one food developer.
The trio brought two top-class consultants on board: Barry Walsh, who also worked as Master Blender for Jameson, and Frank McHardy - former Master Distiller at Springbank.
For his whiskeys, the team uses only fresh spring water from the nearby Ilen River. The grain comes from Irish cultivation and is still malted by hand on site.

Typical of the mild Irish whiskey style, all West Cork bottlings are distilled three times. The stills are only half-filled - for a greater interaction between the pot still pot and the rising vapors.

For the beer keg finishes, the West Cork Blended Whiskey is matured in first-fill exBourbon casks in IPA or bastards from the Black's brewery in Kinsale.
The influence of beer kegs is clearly noticeable in the nose as well as in the taste.

This bottling was finished in India Pale Ale barrels from the Black's of Kinsale Brewery.
