Crossbill Highland Dry Gin 43,8%vol. Sample 0,04l

Jonathan Engels is the brain behind Crossbill Gin when he started production in 2016, he had the idea to return to a lost tradition for 200 years - the harvest of Scottish wild juniper.
Namesake for Crossbill is the native of the Highlands Fichtenkreuzschnabel.

Crossbill Gin comes with only two botanicals - rosehip and juniper berries, both of which are picked in the Cairngorm National Park in the Scottish Highlands by Jonathan and some harvest workers and read locally
The ingredients are then not dried but shock-frozen to be quasi freshly processed.
This unusual method gives Crossbill Gin a particularly soft and fruity taste

Distilling is done in a small 150 liter pot still in Glasgow.
The distillery in Glasgow can be visited and Jonathan offers interested people there a gin school.
