The botanicals.
The lemons that hang in the gardens of the Western Algarve are often the size of grapefruits, bowls as thick as a thumb, and a lemon taste that is only known from childhood. The quality of the botanicals used in our maceration comes before the amount of botanical varieties. For GIN SUL, the beauty of simplicity is, for example, its excellent organic juniper or fresh rosemary.
The bottle.
Gin Sul is known for its typical white clay bottle - often copied, never matched. It is made of stoneware, then glazed and finally printed with sieves. The natural material protects the delicate aromas of the gin from light and temperature fluctuations. And the corks are made especially for Gin Sul by a small family business near Porto.
The water.
The cold, clear and soft water from the Lüneburg Heath is mixed in the Altonaer Spirituosen Manufaktur with our distillate to GIN SUL to bring it to the drinking strength of 43% vol. Thirty-three wells with a depth of up to 326 meters extract our water from the sands and pebbles of the Saale ice age and from the lower lignite sands.
The distillation.
Our small, copper still was handcrafted by masters in their field. When distilling, all alcohol vapors must pass through the spirit basket, which, among other things, filled with fresh lemon peel, rosemary and rose petals. A gin with delicate citrus notes and clear juniper components is created gently, gently and with lots of fresh botanicals.
FROM GIN TONIC TO GIN SUL.
On the outskirts of Lisbon I was infected with Lusophilia many years ago - the love for Portugal and its people. The rough Atlantic coast was not only beautiful, but also provided the perfect backdrop for well-kept 5 o'clock gin and tonics - my second passion. A few years ago, the idea of a Portuguese-inspired gin was created on the beach of Odeceixe to capture the scents and flavors of the south.
I quit my job, scratched my savings, and learned the skills of distilling from a young distiller. The conversion work in the former carpentry began in late summer 2013 and the first juniper distillate flowed into the stainless steel cans a few months later.
