Every year, Madame Chantal Comte goes on "Rum Treasure Hunt" on the remote islands of the French Antilles Guadeloupe and Martinique - the second home of the French family Comte.
For more than 40 years, Madame Comte has been established in Martinique and is well known to the lovable and hospitable islanders.
The goal of the treasure hunt on the islands is not the distilleries of big Rumkonzerne, but the small independent distilleries, which are becoming increasingly rare on this paradisiacal patch of land.
There, in the old maturing cellars of the distilleries, Chantal Comte looks for exceptional rum bottlings, because only the best deserves to be bottled under the name Chantal Comte. As difficult as this search may be every time, the result compensates many times over.
This is how the rum specialties of Chantal Comte manage to transport the dreamlike character of the islands.
In contrast to most other types of rum, the rum in the French Antilles is made from fresh sugar cane juice rather than molasses.
The so-called Rhum Agricole.
The history of Rhum Agricole also starts with sugar cane, a resilient grass that can reach heights of up to 5 meters. This tropical plant par excellence, develops excellently in the climate of such islands as Martinique, where it can enjoy water, sunshine and heat all year round. At the end of the year the plant starts to bloom. A silver-colored flower, similar to a feather duster, shoots from the top.
This marks the beginning of the maturation process.
Between January and July, the sugarcane is carefully beaten with a long knife or a harvester and then transported as quickly as possible to the distilleries. To avoid premature fermentation, which can occur within 36 hours after harvest.
The plants are now pressed in the distillery to win the brown-colored and highly aromatic sugar cane juice. This juice is then filled for 24 to 72 hours in a fermentation tank, where the fermentation process creates a slightly alcoholic "wine", which is between 3.2 and 6% vol. contains.
This "wine" is now distilled from a firing column, producing a colorless spirit of 65-75% by volume: the white rum.
This Rhum Agricole is now usually filled in used Cognac or Armagnac barrels of French Limousineiche to mature.

Very harmonious and elegant in the mouth with aromas of chocolate, lemon leaves, flowers, vanilla and sweet spices.
