This Penderyn AC (Aur Cymru - Welsh Gold) matured in selected ex-Sherry casks.
On St. David's Day (on March 1st, St. David is the patron saint of Welsh) in 2004, the first whiskey was presented to the public. This was the beginning.
As the whisky grows older, it becomes more full-bodied and the complexity increases.
The optimal age is well below that of its Scottish relatives. The undesirable aromas in the distillate, which take many years of maturation to disappear, are not even available due to the distillation method at Penderyn.
Aroma: dark fruits and a lot of toffee, plus green apples and hazelnuts
Taste: a strong, fruity sweetness at the beginning, then becoming drier
Finish: sweet notes of toffee and sultanas - clearly the sherry, with winter spices
