Dieser Penderyn AC (Aur Cymru - walisisches Gold) reifte in ausgewählten exSherryfässern.
Am St. Davids Tag (am 1.März, St. David ist der Schutzpatron der Waliser) im Jahre 2004 wurde der erste Whisky der Öffentlichkeit präsentiert. Dies war der Anfang.
Mit zunehmenden Alter des Whiskys wird er noch körperreicher und die Komplexität steigt.
Das optimale Alter liegt deutlich unter dem seiner schottischen Verwandten. Die unerwünschten Aromen im Destillat, die viele Jahre Reifung benötigen, um zu verschwinden, sind durch die Destillationsmethode bei Penderyn gar nicht erst vorhanden.

Aroma: dunkle Früchte und viel Toffee, dazu grüne Äpfel und Haselnüsse
Geschmack: zu Beginn eine kräftige, fruchtige Süße, dann trockener werdend
Abgang: süße Noten von Toffee und Sultaninen - deutlich der Sherry, dazu winterliche Gewürze
